Sensational Foil-Pack Vegetables

Serves 6; ¾ cup each

You’ll Need

  • 4 cups of vegetables: zucchini chunks (1 ½ inch), mushrooms, carrots, sweet potatoes, peppers, onions, cherry tomatoes.
  • 1 tablespoon of flavorful fat or oil to coat: olive oil, sesame oil, butter, or salad dressing
  • Seasonings: garlic, olives, lemon zest, fresh or dry herbs, salt, pepper, and/or spices

1. Step one

Preheat oven to 450 degrees.

2. Step two

Toss vegetables with oil and seasonings.

3. Step three

Place prepared vegetables in the center of an 18-inch long piece of heavy duty foil (or you can use a double layer of regular foil!) Bring up foil sides and double fold top and ends to seal the packet, leaving room for heat to circulate inside.

4. Step four

Place package on a cookie sheet. Roast 8-10 minutes, flip the packet over and roast for 10 more minutes.

5. Step five

Allow to stand a few minutes after removing from the oven. Be careful. Hot steam will escape when you open the packet. Cut slits into foil to release steam and open the packet.
