Bean Burgers

- 2 cups cooked black, white or other beans, liquid reserved
- ½ cup minced onion
- ¼ cup minced fresh parsley leaves
- 1 egg, lightly beaten
- Salt and freshly ground black pepper to taste
- About ½ cup bread crumbs
- Oil for browning

1. step one
If you want to serve the burgers hot, preheat the oven to 200-degrees F.
2. Step two
Mash the beans with a fork. Use 2 tablespoons of the bean cooking liquid (or other liquid such as water or stock) if the beans are too dry to mash. Do not puree; it’s nice to leave a few bean chunks in this mixture.
3. Step three
Combine the beans with the onion, parsley, egg, salt and pepper. Add breadcrumbs by the tablespoon until you’ve made a batter that is barely stiff enough to mold into a patty. You want to be able to shape it with your hands without it sticking, but you don’t want it stiff or the burgers will be dry.
4. Step four
Cover the bottom of a large, deep skillet with about 1/8 inch of oil; turn the heat to medium. Shape ¼ of the bean mixture into a hamburger-shaped cake and place in the skillet. Repeat with the remaining mixture.
5. Step 5
Cook the burgers until nicely browned on both sides, adjusting the heat so that they brown evenly without burning before turning, 3 to 5 minutes per side. Keep warm in the oven until ready to serve – for up to 30 minutes – or serve at room temperature.
